Key Lime Pie




2/3 cup key lime juice

3 egg yolks

Zest of 2 key limes (about 2 tsp)

14oz can sweetened condensed milk


1 pack of graham crackers

5 tbs butter

2/3 cup sugar




  • Preheat oven to 450

  • Crush graham crackers into small crumbs

  • Melt butter

  • Combine graham crumbs, sugar and melted butter

  • Evenly flatten mixture into 9in pie pan

  • Bake 10 minutes to set crust

  • Remove from oven and set temp to 350.


  • Beat egg yolks till frothy

  • Mix in condensed milk and zest

  • Gently fold in lime juice until barely mixed

  • Pour filling into crust

  • Bake 10 minutes, immediately refrigerate

  • Allow to set for 4 hours

  • Top with whipped cream and serve



  • I like a tart pie with sweet topping, if you want a more mellow flavor try 1/2 or 1/3 cup of juice

  • When serving, top with whipped cream. Making your own is as simple as adding confectioners sugar to heavy cream until its as sweet as you want then beating until it's whipped cream... Store bought works fine too.

  • Squeezing Key limes to get enough juice is a hassle that doesn't translate into substantially better flavor. i suggest using the limes for zest and buying the actual juice in a bottle.

  • The same could be said for the crust, store bought tastes almost as good
